Ingredients

Main Ingredients
1kg pork ribs
3 apples (Honeycrisp or Fuji), about 500g
½ onion, sliced
Marinade
3 tbsp light soy sauce
1 tbsp dark soy sauce
2 tbsp honey
½ tsp white pepper
½ tsp freshly ground black pepper
½ tsp salt (adjust to taste)

For Brushing & Garnish
1 tbsp vegetable oil or olive oil
2–3 sprigs fresh rosemary (or 1 tsp dried rosemary)
Freshly ground black pepper, for serving

Instructions

1. Marinate the Ribs
Pat the pork ribs dry with paper towels.
In a large bowl, combine the light soy sauce, dark soy sauce, honey, white pepper, black pepper, salt, and sliced onion.
Add the ribs and coat them thoroughly with the marinade.
For vacuum marinating, transfer the ribs to a vacuum bag, seal, and marinate for 20 minutes.
For traditional marinating, refrigerate in an airtight container for at least 1 hour, or up to overnight for deeper flavor.

2. Prepare the Apples
Wash the apples, remove the cores, and slice them into 5mm (¼-inch) thick slices.
Arrange the apple slices in a slightly overlapping layer on a baking tray or pizza pan.

3. First Bake
Place the marinated ribs on top of the apples and scatter the marinated onion slices over the ribs.
Cover the tray tightly with aluminum foil.
Bake in a preheated oven at 180°C (350°F) for 30 minutes.

4. Finish Baking
Carefully remove the foil.
Brush the ribs lightly with vegetable oil or olive oil and sprinkle with the rosemary.
Increase the oven temperature to 220°C (425°F) and bake for another 10 minutes, or until the ribs are beautifully browned and the apples are lightly caramelized.

5. Serve
Allow the ribs to rest for 5 minutes before serving.
Sprinkle with freshly ground black pepper and serve with the roasted apples, crusty bread, or a fresh green salad.
